Knife CareEven the most casual of home cooks knows that a good, sharp chef’s knife is the most important tool in any respectable kitchen. There’s no use spending the money on expensive tools if you’re not going to give it the necessary care. Here are the basics of cleaning, sharpening and storing your knives. 1- Keep knives in knife block or knife drawer insert when not in use. 2- Make sure knives are completely dry before storing. Wet knives can rust. If you do get a rust spot, you can carefully remove it with steel wool and water. 3- The best way to wash a knife is quickly with lukewarm soap and water. Do not wash knives in the dishwasher. Natural handles can become loose from expansion and contraction. Steel can become brittle from high heat and quick cooling. 4- Never use marble, stone, tile, glass or any other extremely hard surface for cutting. Stick with wood or plastic for a cutting surface. Surfaces that are too hard will dull, nick, and damage blades. 5- To keep knives sharp, take them to a professional sharpening service. Good quality knife edges last years. Most homeowners that sharpen their own knives do more damage than good. The exception to this rule is if you are a professional chef or butcher. In this case, you should learn the proper sharpening techniques.
