Why Buy A Set?
A knife block set comes with the block and the knives. It is most common
for people to buy the knives with the block. The reason is that even though
you want to clean out your knife drawer by buying a block there is probably
not a block that will fit the exact number and styles of knives you have
accumulated. Some people make their own blocks by buying bamboo and food
grade glue. If you adventurous enough, you may want to try it.
Seven Knife Set
The seven knife block set is the most popular because it gives you enough
knives without excess. A seven piece set will come with a sharpening steel,
a carving knife, a cook's knife, a bread knife, a utility knife, a paring
knife and a knife block. The items in the seven piece set vary by manufacturer
so make sure are getting what you need. For example, some seven piece
sets come with kitchen shears instead of a bread knife.
Fourteen Knife Set
The difference between the seven and fourteen piece set is usually a fillet/boning
knife and some steak knives. Many fourteen piece sets come with six steak
knives (you should really have 8 or more), one fillet knife, maybe a slicer,
and maybe some shears.
